Cultural historian, restaurant consultant, raconteur, and for many years literature professor at Princeton. He has also authored and edited some 10+ volumes and well over 100 scholarly articles. He recently was named editor of the FCI Review by The French Culinary Institute of New York. He currently is food columnist for Westside News Publications.
